While it might not be as catchy as the original “Monster Mash,” it’s sure to quell the fall hungry scaries and comfort whatever else may ale you.
Smashed root vegetables are like mashed potatoes but they are heartier and definitely have more texture. But hey, they’re fancier than mashed potatoes and they’re just as easy to make. Plus, it’s Fall, so just do it. Peel, boil, smash, season, eat. Seriously folks, this is why your boyfriend/girlfriends parents laugh when you can’t cook. It’s so not hard. And you’re welcome.
Get rooted: parsnip, celery root, rutabaga, and regular potato if you want. One large of each will work just fine. Add 3/4 of a cup of milk (or cream if you’re a real gangster), a stick of unsalted butter (Kerry Gold is my fave), and seasoning (salt, pepper, rosemary, thyme, garlic powder).
Now you do the root vegetable four-step: wash, cap, peel, dice. You’re a pro at this right? Next, add water to a pot, boil, add root vegetables, drink a beer, and wait 10 minutes. Now, strain, add your dairy, the seasoned mixture mentioned above, and get to smashing. Unless you have Hulk arms, I’d get the hand mixer out. Mix until you have a consistency you like and you’re finished. See, told you it was easy.
They’re super heady, so don’t expect a smooth creamy texture here. Use a fork, not a straw.
