Make Silver Spring Your Next Dining Destination
All Set Restaurant & Bar, located in Silver Spring, Maryland, has recruited friend and Maryland native Randall Matthews, formally of The Mina Group and True Food Kitchen, to host a pop-up dinner series at the restaurant starting Monday, February 26. Guests are encouraged to come dine at the restaurant, between February 26thand March 4th, to enjoy Matthews’ menu, which will showcase a creative twist on American fare while reflecting a passion for fresh ingredients, and memorable flavors.
Standout dishes include Roasted Parsnip Agnolotti with crispy bacon jam, black truffle butter and chives; Charred Cauliflower Tartine with caramelized onion crème fraîche, harissa spice and house-made focaccia; Octopus a la Plancha with papas bravas, garlic fat, sea bean, chorizo vinaigrette, and the Buttermilk Semifreddo with meyer lemon curd and tangelo granita.
The cauliflower tartine is sure to be a crowd pleaser during your visit. Presented in a glass dome swirling with smoke, which is uncovered table-side for dramatic effect, this vegetarian delight hits all the high notes for a starting course – delicious house-made focaccia, beautiful charred cauliflower, fatty creme fraiche and bright chive micro greens.
Not to be overlooked is the pear and candied walnut salad, a refreshing middle course with just a hint of pungent blue cheese.
The stunning octopus a la plancha pairs incredibly tender octopus with brilliantly crispy potatoes. Since my octopus expectations were met, I was left marveling at the flawless execution of the papas bravas – delightfully crispy on the outside, slightly smashed, with the tender pillowy softness on the inside. Who knew the potatoes would be the star of this dish for me?!
The parsnip agnolotti may look over indulgent, but the sweetness of the parsnip lends a beautifully light take on this Italian classic. Don’t worry, there’s enough crispy bacon jam to make you feel satisfied and indulged. It’s delicious.
So you never order chicken when you dine out? Think again. This pan roasted chicken with Parisian gnocchi and fermented garlic gremolata is to die for. Crispy chicken skin, seared and fluffy gnocchi, and unique fermented garlic gremolata creates a comforting meal with exciting surprises for your palate to discover.
End your evening with the semifreddo – it’s perfectly unsweet with hints of citrus and a wonderfully jiggly texture.
