Based on the results of a recent grilled cheese experiment that couldn’t have turned out more delicious, and the online response, we just had to share this super easy recipe.
This is how you make the ultimate braised beef short rib grilled cheese on sourdough bread with smoked Gouda, caramelized onions, fresh chives and a au jus reduction. Sunday football will never be the same again.
Here’s what you will need to make about 6 big ass sammies:
- Bone-in beef short ribs (8 ribs)
- Yellow onion (1 large)
- Smoked Gouda cheese
- handful of chives
- Braising liquid mixture (beef broth, red wine, water to cover ribs and onions in crock pot)
- Dry spice mix: 3 bay leafs, 3 tablespoons of garlic and onion powder, 2 tablespoons of mustard powder, 2 tablespoons of paprika, heavy amount of cracked black pepper, ground salt, 2 tablespoons of thyme and oregano, several sprigs of fresh rosemary.
- Cheese cloth
- yellow mustard
- balsamic vinegar
- 1 tablespoon on corn starch
- 1 loaf of sourdough bread
Step 1: Prep the beef short ribs
Place beef short ribs in a 2 gallon freezer bag or large covered bowl, add dry spice mix (listed above), julienne your onion and add that to the bag. Seal and refrigerate over night.
Step 2: Cook that bag of yum yum
If you don’t have a crock pot you can use a dutch oven, but a crock pot is ideal. Set it for low before you leave in the morning (around 8am) and by dinner time it’s ready to be prepped for grilled cheese sandwiches. So, 10-12 hours basically. The bone will come clean out when it’s done.
Step 3: Remove meat and make au jus sauce
Take the meat and onion mix from the crock pot with a slotted spoon. Then, using a funnel or colander lined with cheese cloth, slowly pour the crock pot liquid that remains into a sauce pan. Add 2-4 table spoons of mustard to taste, 1/2 – 3/4 cup of balsamic vinegar. Heat to slight boil while stirring. Lower heat to simmer, stir in corn starch. Continue stirring until desired thickness is achieved and corn starch is dissolved.
Step 4: Build that epic short rib grilled cheese
Butter the outside of your sliced sourdough bread. Place in a very hot cast iron skillet butter side down. Add sliced smoked Gouda, then top with the braised beef short rib and onion mix, add more sliced cheese and top with the second slice of sourdough bread – buttered side up. Wait until the bottom is nice and crispy adjusting heat as needed. Carefully flip and sear the other side until the cheese has melted.
Step 5: Nom nom your sammie
Slice on a diagonal, top with fresh chives and drizzled au jus. Place extra au jus table side for dipping.
