Get the “Skinny” on Skinnytaste’s Gina Homolka

Most of you know Gina Homolka, a NYTimes best selling author, and the creator of Skinnytaste, an highly sought after and award winning blog filled with simple, flavorful recipes that are low-calorie (some of which are pictured below). I have personally been a Skinnytaste fan for just about a decade. I always encourage friends, family, and clients to utilize her creative recipes. She has recipes for everyone, from seasoned home cooks to novice college students as well as those following specific dietary restrictions such as paleo, gluten free, and weight watchers.

Gluten-Free, Dairy-Free, Blueberry Oatmeal Muffins

My favorite element about Gina’s recipes is that I likely have all the ingredients I need in my fridge and pantry without having to run to the store. I heavily rely on healthy food blogs for recipes, but I feel like there is always those few ingredients that you have to go out and buy and will probably not use again.

I have all the Skinnytaste cook books and always have her website pulled up on my phone or computer for quick, simple, healthy evening meals. Funny thing, when she sent me the answers to the questions below I had her favorite recipe (answer #2) cooking in my instant pot! It’s a must try if you haven’t already– it’s so simple and incredibly delicious (I substitute ground turkey).

I feel like I’ve “known” Gina for all this time through her recipes, books, and posts and I thought, what better way to learn more about my blog idol than to showcase her in an interview on my other favorite food blog Hungry Lobbyist. I came up with some questions I personally had as well as some that fellow foodie fans would enjoy learning!

What’s your favorite food?

Avocado 🙂

What recipe from your recipe books do you make the most?

My family loves Picadillo, so the Slow Cooker Picadillo is probably the one I make the most.

What is your favorite kitchen utensil, appliance, or piece of equipment?

Love my Instant Pot! Cooks food in half the time, so it’s a huge time saver!

What type of camera/ editing software do you use?

I have a Canon 5D, I edit my photos in Lightroom.

What was the hardest obstacle you had to overcome when creating your business “Skinnytaste”?

The hardest obstacle is probably dealing with algorithm changes on social media and google which can hurt your traffic.

What is your best tip for being healthy?

Make yourself a priority but also find a balance. Pencil workouts in your calendar, drink enough water, cook your own meals from scratch with real food, and treat yourself to an indulgent meal or glass of wine so you don’t feel deprived.

What are your top 3 favorite healthy ingredient swaps?

Love using mashed avocado in place of mayo, cauliflower in place of rice or potatoes, raw honey in place of white sugar.

How do you define healthy?

Healthy isn’t just about what we put in our bodies, it’s also about how much sleep we get, how much we move and our overall state of mind. Focusing on rest and time to recharge is just as important and eating good.

How do you find your inspiration?

A great meal out, travel, inspiration is everywhere!

What was your funniest kitchen accident?

Made Romesco sauce in the blender and forgot to put the lid on, I can laugh now but it took me hours to clean off the ceiling and walls.

What is your current favorite food trend?

Sheet Pan dinners, they are easy and I love not having to wash several pots.

Which social media site is your favorite?

Instagram, I’m very visual.

If you were on the Food Network show Chopped, what ingredients do you think would be in your basket?

Pork belly, zucchini noodles and avocados

If you could eat a meal made by any person in the world, who would it be?

My Mom, nothing beats home cooking!

Since you’re incredible at making food at home, how often do you go out to eat and what type of food do you go out for?

I love to eat all types of food, I go at least once a week. Favorites are Peruvian, Mediterranean or Italian.
